Oak is often described as a flavour added to wine. It contributes flavour, but its more important effects are structural, and they depend on the size and history of the barrel rather than on the wood alone.

Three separate things happen in a barrel

Oak contributes compounds from the wood itself, allows a small controlled ingress of oxygen, and absorbs some harsh components from the wine.

Those effects operate on different timescales and can be adjusted independently by choosing different barrels.

A winemaker who wants oxygen without flavour uses old barrels. One who wants flavour quickly uses new small ones.

Discussing oak as a single variable obscures the fact that it is at least three decisions made at once.

What the wood actually contributes

Oak contains lactones that read as coconut and wood, vanillin that reads as vanilla, and compounds released by heating that read as toast, smoke and spice.

Different oak species and forests contain these in different proportions, which is why the origin of the wood is specified on technical sheets.

Tighter-grained wood from slower-growing trees releases compounds more gradually, giving a subtler result over a longer period.

Seasoning the staves outdoors for a period before coopering reduces harsh green tannins, and the length of that seasoning affects the finished wine as much as the forest does.

Toast level is set during coopering

Barrels are heated to bend the staves, and the degree of heating is controlled deliberately as a flavour decision.

Light toast leaves more raw wood character and more extractable tannin. Heavy toast creates more smoke, coffee and caramel notes and destroys some of the vanillin.

The heat also caramelises wood sugars at the surface, contributing sweetness that has nothing to do with residual sugar in the wine.

A winemaker orders barrels by toast level much as a chef specifies a cooking temperature, matching the treatment to the fruit.

Size determines the ratio of wood to wine

A small barrel has more internal surface per litre of wine than a large one, so the wine receives more wood contact for the same period.

The standard small barrel of a few hundred litres gives a pronounced effect within a year. A large cask of several thousand litres gives almost none.

This is why large old casks are used for wines meant to taste of fruit and place rather than of oak. They function as vessels rather than as ingredients.

Between those extremes, intermediate sizes are chosen to dial the influence up or down without changing the ageing period.

New barrels lose their power quickly

Most extractable compounds leave the wood in the first fill. A second-fill barrel gives considerably less, and by the third or fourth fill the flavour contribution is small.

Producers therefore describe their regime as a percentage of new oak, replacing part of the stock each year and rotating the rest.

Older barrels still perform the oxygen and absorption functions, so they retain value long after their flavour contribution has faded.

A cellar full of old barrels is a deliberate choice rather than a cost saving, though it happens to be both.

Oxygen ingress is the quiet part

Wood is slightly porous, and small amounts of oxygen enter through the staves and around the bung over months.

That slow exposure polymerises tannins into longer chains, which softens the texture and stabilises colour in red wine.

The same exposure in a sealed tank would require deliberate oxygen dosing, which is exactly what some producers do as an alternative.

The rate matters more than the total. Too fast and the wine oxidises; too slow and the tannins stay hard.

Oak alternatives do part of the job

Staves, chips and powdered oak deliver flavour compounds into a tank at a fraction of the cost of barrels.

They cannot reproduce the oxygen exchange, so producers using them often add controlled micro-oxygenation separately.

The results can be good, particularly at lower price points, but the flavour tends to sit on the surface of the wine rather than integrating.

Regulations in some appellations restrict or prohibit these methods, which is one of the practical reasons barrel ageing persists at the top end.

Why heavy oak went out of fashion

There was a long period when pronounced new oak signalled ambition, and wines were built to display it.

Palates shifted toward freshness and transparency, and heavy oak came to read as a mask over the fruit rather than as a mark of quality.

Producers responded by reducing new oak percentages, moving to larger formats and extending seasoning times to soften the wood's contribution.

The underlying techniques did not change. What changed is how much of the barrel a drinker is now expected to notice, which is close to none.
