A fruit syrup made behind a bar lasts days. The same fruit turned into a shrub lasts months. The difference is acidity, and it changes both the preservation and the flavor.
What a shrub actually is
A shrub combines fruit, sugar and vinegar into a concentrated syrup that is diluted at service, a preparation that predates refrigeration in American kitchens.
The fruit is usually macerated in sugar first, drawing out juice by osmosis without heat, and vinegar is added afterward.
The result is intensely tart and sweet at once, which is why it functions in a drink as both the sour element and the sweetener.
Why acidity does the preserving
Most spoilage organisms require a narrow range of acidity to grow, and vinegar pushes the mixture well outside it.
Sugar contributes separately by binding water, leaving less of it available for microbial growth even where the acidity alone would not be sufficient.

Why plain fruit syrups fail so quickly

What the vinegar choice changes

Stronger vinegars preserve more effectively but dominate delicate fruit, so soft fruits are often paired with gentler ones and given a shorter storage expectation.

Because a shrub carries acid, sugar and fruit at once, adding it to a build changes three variables simultaneously and the rest of the recipe has to be adjusted.
